1377392 Soy protein composition UNILEVER Ltd 23 March 1972 [25 March 1971] 7773/71 Heading C3H A dry substantially undenatured soy protein composition reconstitutable with water to a liquid protein composition which can be set by heat is obtained from a soy protein isolate by mixing with an aqueous solution of sodium chloride, to form a liquid soy protein composition of pH 4-7 containing from 10-50% by weight of dissolved soy protein, and the liquid soy protein is spray dried at 80‹ C. or above. The soy protein may advantageously be obtained by extracting defatted soybean meal with water in the presence of a non-toxic water-soluble sulphite, bisulphite or dithionite salt and precipitating the isolate from the salt obtained.
