Abstract

1525808 Incorporating aroma gases into coffee products SOC DES PRODUITS NESTLE SA 15 Nov 1976 [24 Nov 1975] 47412/76 Heading A2B Soluble coffee solids are aromatised by contacting with a foamed emulsion made by mixing an aroma gas comprising non-condensible coffee volatiles (i.e. those not condensing at 0‹C or above under atmospheric pressure) under at least 5 kg/cm2 pressure with an absorbent comprising an aqueous liquid and a liquid edible oil. The non-condensible volatiles may be obtained by roasting, grinding and steam stripping fresh coffee, cooling to 75-95‹C to remove steam and then cooling to 0-15‹C to produce a liquid concentrate, which may be used as said aqueous liquid, and an aroma gas stream; gases from grinders, roasters and extraction processes may also be used. In the absorbent, the aqueous liquid may include an encapsulating agent for the aroma gas, e.g. gum, alginate, gelatin, starch, soluble coffee solids, and the oil may be coffee oil. The weight ratios of gas:absorbent and aqueous liquid:oil may be 1:2-1:50 and 3:1-1:5 respectively. If desired the gas may be pre-compressed and the absorbent preemulsified. The mixing may be carried out at 5-40‹C and up to 15 kg/cm2. The foam may be circulated through a mixer to maintain its condition and may be partly recycled to the initial mixing stage. The foam density may be less than 0.8 gm/cc at 760 mm Hg and 10‹C. The foam may be contacted with dry- or extract-form soluble solids at 5-40‹C to produce 0.2-1 wt. % oil, based on the solids, in the product.
