Abstract

In a process for the production of protein hydrolysates, a protein is treated with at least one protease and at least one phosphatase. The treatments may be sequential or simultaneous: preferably the protein is first hydrolysed by protease, then by phosphatase, and finally by more protease. The enzymes may be from animal, vegetable or microbiological sources. The protein may be casein, lactalbumin, fish meal, soya-bean meal, ground-nut meal or the cell-bodies of various micro-organisms (e.g. yeast). The hydrolysate may be treated with activated charcoal to reduce the content of L-phenylalanine and L-tryptophane.
