Abstract

1,160,356. Degraded cross-linked starch. NATIONAL STARCH & CHEMICAL CORP. 8 Feb., 1968 [17 Feb., 1967], No. 6384/68. Heading C3U. A degraded cross-linked starch product is made by (a) reacting starch with a cross-linking agent to form cross-linked intact starch granules having a granule swelling power (GSP) of 10-31; (2) swelling the resultant granules; (3) reacting the swollen granules, preferably at a pH of 3-10 and a temperature of 20- 100 C., with an enzyme capable of splitting the 1-4 links in the amylopectin moeity but not the 1-6 links, and which is not capable of splitting the linkages between any substituent group bonded to the amylose or amylopectin moiety; and (4) isolating the product. The GSP measures the degree of cross-linking by the amount of hydrated swollen paste per gram of anhydrous starch formed by cooking in water under certain specified conditions. The enzyme is preferably beta-amylase, but alpha – 1,4 – glucosidase and phosphorylase are also suitable. Many cross-linking agents are specified, and the cross-linked starch may also contain ether or ester groups. In the examples, the following are used: epichlorhydrin optionally followed by acetylation; adipic acid/ acetic anhydride mixture; phosphorus oxychloride optionally followed by treatment with propylene oxide to introduce hydroxypropyl groups; and glycine/NaOCl reagent. Conventional swelling procedures are used. Preferred starches are the ” waxy ” types having a high amylopectin content. The products are stable and resist syneresis and gelling at low temperatures.
