Abstract

1,199,998. Preserving food. UNILEVER Ltd. 28 March, 1969 [3 April, 1968], No. 16133/68. Heading A2D. [Also in Division B8] A package for a perishable foodstuff comprises a substantially gas impermeable container enclosing the foodstuff in contact with a gaseous medium containing at least 70 vol. per cent oxygen and, where the foodstuff is unfrozen, containing also at least 10 vol. per cent carbon dioxide, any other gas present in the gaseous medium being inert to the contents. Preferred gas compositions are 80 vol. per cent oxygen and 20 vol. per cent carbon dioxide or 75-85 vol. per cent oxygen and 25-15 vol. per cent carbon dioxide or with frozen foodstuffs, 70-100 vol. per cent oxygen and 30-0 vol. per cent carbon dioxide or with unfrozen foodstuffs, 70-90 vol. per cent oxygen and 30-10 vol. per cent carbon dioxide. Preferably at least part of the container is transparent and it may comprise a transparent plastics film of e.g. laminated polyethylene and regenerated cellulose, the foodstuff optionally being placed in a dish or stackable container which is sealed by the film. A layer of gas permeable, water impermeable film e.g. of low density polyethylene or p.v.c. may be wrapped in contact with the foodstuff to reduce condensation, the gaseous medium filling the space between the containers. Packaging of meat, i.e. chicken pieces and beef steaks and steaklets, plaice fillets and sliced carrots is described.
