1,205,829. Curing and drying vanilla beans. McCORMICK & CO. Inc. 23 Oct., 1968 [27 March, 1968], No. 50200/68. Heading A2Q. Mature green vanilla beans are first cut into pieces, e.g. half an inch long; the pieces are then cured within a heated enclosure and dried in two stages, viz.: at an elevated temperature in a current of heated air, and then in air at about room temperature and ambient humidity, to produce dried and cured vanilla bean pieces having a vanillin content of about 0.40 g/dl and a moisture content of about 20-25 per cent by weight. The hot-air drying is continued until the moisture content of the bean pieces is reduced to a value at which it is stated that much more rapid drying, which would tend to overdry the beans and reduce their vanillin content, commences, this value being said to be about 35-40 per cent by weight. Apparatus for carrying out the process comprises cutting means, a plurality of stackable perforated trays for receiving the bean pieces, at least one curing tank enclosable about one or more stacks of trays and adapted to be maintained at about 140F. for 70-78 hours, a rotary, forced hot air drier constructed and arranged to receive the cured bean pieces, for lowering their moisture content to 35-40 per cent by weight, and a conditioner comprising at least one perforated tray for containing the partially dried bean pieces and a fan arranged to blow ambient air through the perforated tray and the contained bean pieces. After the beans have been cut and before being received in the stackable trays, the bean ends and some of the split pieces of the beans, which are said to have a low vanillin content, are removed by passing the beans over a perforated sheet through which the ends and split pieces fall.
