Abstract

1487680 Synthetic cheese curd UNIVERSAL FOODS CORP 29 Oct 1975 [20 Nov 1974] 44643/75 Heading A2B Imitation cheese curd is made by reacting a basic calcium compound e.g. Ca(OH) 2 with an aqueous suspension containing 2 to 15% by weight casein, the Ca compound being used in an amount of at least 7.5 x 10-4 equivalents per gram of casein and at pH 7 or above. and coagulating by means of an enzyme e.g. rennet or a fungal enzyme. To form a synthetic cheese, the curd is mixed with an edible oil. At least 0.028 gms. of calcium hydroxide per gram of casein may be used. 0.8 to 11 parts CaCl 2 , per part Ca(OH) 2 may also be added. The coagulating step may be carried out at pH 5.9-6.9, at 80-105‹F, the acidification being by means of acetic, lactic, citric, sulphuric or phosphoric acid. The curd may be dewatered to 60-70% water before mixing with the oil, which may have a Wiley melting point of 70-115‹F. 0.7-1.7 parts curd may be mixed with each part of oil (drv weight basis) and mixing may be at 140-180‹F for a time sufficient for homogenisation and pasteurisation. The blend may also contain a phosphate emulsifier, acid, salt and flavourings. The oil may be soybean. cotton seed. or coconut oil. or butter or lard.
