Abstract

1313281 Heat treatment A P V CO Ltd 13 Dec 1971 [14 Jan 1971] 1953/71 Heading A2D A method of heat treating particulate solids or particulate solids-bearing liquids comprises heat treating the solids or solids bearing liquid in an environiment having a superatmospheric pressure and a temperature in excess of 100‹C and then cooling a continuous flow before depressurisation by injection of a cooling liquid on entry into a cooling chamber which is itself further cooled by an external coolant. The cooling liquid may be sterile and may be part of the food end-product, e.g. in the heat treatment of meat, the cooling liquid may be gravy. The pressure in the cooling chamber may be maintained at a value just below that in the heat treating environment. The method may be carried out in an apparatus of the type shown in the figure wherein solids which have been heat treated in a high pressure high temperature environment are passed via fixed blade rotary valve 2 into a cooling chamber consisting of a cylindrical body 9. Cooling liquid is injected at injector 3 and optionally pressurised sterile gas, i.e. air at 4. Within the body 9 which is provided with coolant jacket 6, is a rotary spiral flight 11 which mixes and passes the cooling liquid-solids mixture along body 9. This mixture then passes through punch valves 13 and then may be fed to a canning liquid..
