Abstract

1354469 Confectionery; coating process SOLLICH OHG 7 March 1971 [10 March 1970] 58054/70 Headings A2A and A2B A process of making confectionery comprises a step of extruding a sticky material onto a moving layer of molten chocolate coating material on which the sticky material floats. The molten layer is subsequently hardened. The sticky material may be whipped egg white, caramel, sugar, fudge or preserved fruit. In the apparatus shown a layer of molten chocolate material formed on support plate 7 by feed roller 4 and stripper 5 is conveyed along plate 7 by lattice conveyor 6. A band 21 of sticky material is deposited on the chocolate material and floats thereon. The chocolate material solidifies and forms a coating on the band. Surplus chocolate material falls from the coated band before it is passed to conveyor 31 in cooler 30. The coated band may be cut or stamped by device 35. The band may be coated on its top surface by passing it through a coating curtain (e.g. chocolate).
